This snack will cool you off and cure your sweet tooth with two simple steps.
1.) Chop watermelon into cubes and freeze overnight.
2.) Eat and repeat
Planning to catch some tuna this weekend? Bring along some ripe avocados and enjoy these delicious dishes!
TUNA POKE STUFFED AVOCADO
Dice up your fresh tuna
Mix the tuna cubes, lime, brown sugar, sesame seeds and soy sauce
Scoop the tuna mixture into avocado halves and serve!
Slice and sear fresh tuna
Stack: 1 piece tuna, mango and avocado
Tommy Thompson's (Leftover) Fish Fry Burrito
Last night's fish: fried, broiled, grilled, blacked...doesn't matter!
Cilantro...unless it taste like soap to you
Cook the beans (and I like to smoosh them quite a bit to make more of a black bean paste). Re-heat the fish a little. Cram as much of above ingredients as you can, into a flour tortilla shell and lighlty toast it in a skillet...with butter...because everything is BETTER with BUTTER! Garnish with salsa (see mango salsa below)
IT'S A BERTRAM BBQ!
HAWAIIAN PULLED PORK
3.5 lbs boneless pork shoulder
2 TSP Brown Sugar
1 TSP Paprika
1 TSP Chili Powder
1 TSP Garlic Powder
1 TSP Onion Powder
1/2 TSP Salt
1/4 TSP Ground Ginger
1/4 TSP Thyme
1/4 TSP Cayenne Pepper
1/4 TSP pepper
6 oz. Pineapple Juice
1/2 Cup Apple Cider Vinegar (that's healthy, right?)
1 Pineapple, cored, peeled and diced
1/4 Cup Diced Red Onion
1 Jalapeno Pepper, Seeded and Diced
1/4 Cup loosely chopped Cilantro
1 TBSP Oil
1. Stir together all dried seasonings and rub into all sides of pork
2. Place in slow cooker and carefully add liquids to bottom
3. Cover and cook on low for 8-10 hours
4. Pork should shred easily with forks. If not add additional cooking time.
5. Toss together all ingredients for salsa and refrigerate until ready to serve
6. Serve shredded pork on hawaiian buns with salsa
